Julio Lazzarini

HEAD CHEF

Chef Julio Lazzarini, a native of Puerto Rico and a graduate of the Culinary Institute of America, began his culinary journey at Miami's prestigious OLA Miami under the mentorship of globally renowned Latin chef Douglas Rodriguez. He later honed his skills at the Four Season Hotels in West Palm Beach and Las Colinas, as well as the historic Dilworthtown Inn outside Philadelphia. Julio's venture as a proprietor commenced in Wilmington, DE, where he established Orillas Tapas Bar and Vinoteca 902.

Described as an 'envelope-pushing visionary' in a Delaware Today review, Chef Julio galvanized a tapas revolution with his innovative approach. Alongside his wife, he led RED FIN Crudo + Kitchen in Rhode Island, showcasing the vibrant flavors of his family's Spanish and Caribbean heritage. His culinary prowess has graced prestigious platforms such as the James Beard House in NYC, Beat Bobby Flay, and Food Network's 'Chopped,' where he reached the finals. Julio also served as a finalè judge on The Next Food Truck Race and made appearances on NBC and Fox morning shows.

Chef Julio Lazzarini has had the honor of serving notable personalities like Bill Clinton, the Dalai Lama, and Joe Biden. His culinary expertise extends to marquee events such as Saborea Puerto Rico, the Mid Atlantic Food + Wine Festival, BVI WineMakers Dinners, Meal for the Masters, and the National Restaurant Association.

  • Sean Sullivan

    CO-OWNER

    Sean Sullivan of Brewster, embarked on his hospitality journey during high school when he took on the role of Bellman at Ocean Edge Resort & Golf Club. A graduate of Nauset High in 2004, Sean dedicated a remarkable 15 seasons to Ocean Edge, gradually advancing through various departments and assuming management roles. His journey reached its pinnacle as he served as the Director of Rooms and contributed to the executive committee. Following his tenure at Ocean Edge, Sean spent six years in Boston, where he delved into food and beverage management within hotels and restaurants. In 2018, he opened his own restaurant, Freemans Grill, situated at Captains Golf Course. Sean's commitment to excellence was validated in 2020 when Freemans Grill achieved the prestigious title of the #1 Rated Restaurant in Brewster on TripAdvisor.

  • Sam O'Connor

    CO-OWNER

    Born and raised in Springfield, MA, Sam's early exposure to the culinary world came through his parents' ownership of the delis Celery Stalk in Holyoke, MA. From a young age, he actively contributed as a daily helper in the delis, gaining proficiency in both front-of-house and back-of-house operations. Sam's journey took a new turn in the summer of 2010 when he began visiting Cape Cod with friends, marking the commencement of his tenure at Chatham Bars Inn. Starting in the front-of-house with pool/beach operations, Sam gradually advanced to the Front Desk, culminating in a managerial role in the Food & Beverage Department for his last three years at the renowned property. In 2018, he embraced the role of General Manager at Freemans Grill, a pivotal step that ultimately led him to become an owner at Navillus Bar & Grill, showcasing his remarkable growth and dedication to the culinary field.

  • Will Belscher

    BAR MANAGER

    Will Belscher of Chatham comes with an impressive 16 years of diverse industry experience spanning both the front and back of the house, Will brings a wealth of knowledge to our team. Although he initially pursued education in exercise science in Florida, his journey took him out west, residing in Salt Lake City, UT, Winterpark, CO, and San Diego, CA. Notably, Will owned and operated his own Irrigation business for four years before transitioning to the vibrant world behind bars. You might have spotted him at esteemed establishments like La Bella Vita and Del Mar Bar and Bistro, or contributing his skills to various catering and wedding events locally during the summer. Will's passion lies in delivering quality food and creating memorable dining experiences. Beyond the bar, his hobbies and interests include golfing, skiing, shooting pool, enjoying Sunday beach days, and delighting friends with his culinary creations.
